- Combine ricotta, lemon and thyme together. Check seasoning. Place mixture under the skin between the skin and breast.
- Drizzle olive oil over spatchcock and season with sea salt and pepper.
- Place spatchcock in the oven for 40 minutes.
- Turn off oven, keep oven door ajar and allow to rest for 10 minutes in the oven as the oven cools.
