Recipe : Spatchcock with Ricotta, Lemon & Thyme

Lemon Juice
Lemon Zest
Fresh Thyme



  1. Combine ricotta, lemon and thyme together. Check seasoning.  Place mixture under the skin between the skin and breast. 
  2. Drizzle olive oil over spatchcock and season with sea salt and pepper.
  3. Place spatchcock in the oven for 40 minutes.
  4. Turn off oven, keep oven door ajar and allow to rest for 10 minutes in the oven as the oven cools.
