provenance | quality | integrity
Hudson Meats is a Sydney Butcher & Deli and was established in 2007. We wanted to open a store that provided quality produce, focusing on pasture raised and grass-fed beef. You can buy online and have delivered within Sydney, Australia. We wanted people to know the provenance of their products and give people the confidence that they are sourcing the best available produce. We want people to know the source of their food.
In 2007, Colin Holt an award winning Chef was ready to hang up his apron and Jeff Winfield was ready to leave the corporate world of IT. The duo set out to open a retail outlet like no other, a store that would be more than just a ‘regular butcher store’. It would focus on bringing the farmers’ product direct to the customer and become a one-stop-shop with deli items and dry goods...
We want people to know the source of their food. Knowing where a product is grown and how the product is raised gives us confidence that we are delivering to our customers the best available product...
Slow-roasted lamb shoulder is one of the most forgiving cuts to cook. The long, gentle roast transforms the meat into meltingly tender strands. Roasted beetroot and carrots add sweetness to the dish, while the sautéed beetroot stalks and greens served over yoghurt and a contrasting tang. Traditional Tracklements Mint Jelly completes the dish to help cut through the richness, creating a dish that feels both rustic and fresh.
Sweet, spiced hot cross buns make a surprisingly delicious stuffing for roast chicken, perfect for Easter. The buns soak up the buttery chicken juices while their cinnamon-and-fruit notes echo classic Easter flavours. Balanced with herbs, onion, and fresh peaches, the result is a roast that feels festive but effortless—perfect for an Easter Sunday lunch
