Recipe : Kibbeh with Yoghurt Cucumber Sauce and Fattoush Salad

Recipe makes 30 kibbeh balls
 
Kibbeh dough
700g minced beef
1 ½ cup bulgur wheat
1 onion diced
1 tbsp all spice or Arabic 7 spice
1 tsp cumin
2 tsp salt
2 tbsp zaatar (optional)
 
Kibbeh filling
300g minced beef
2 tbsp olive oil
1 onion finely diced
½ cup pine nuts
1 tbsp all spice or Arabic 7 spice
1 tsp smoked paprika
1 tsp cumin
1 tsp salt
1 tsp black pepper
 
Sides:
Yoghurt cucumber dip
500g Greek yoghurt
2 cloves minced garlic
1 Lebanese cucumber finely diced
1 tbsp fresh dill
1 tsp salt
 
Fattoush salad
Toasted torn pita bread
I large romaine lettuce, chopped
1 large tomato, chopped
1 chopped red onion
½ cup olive oil
Juice from 1 lemon
1 tbsp mustard

Method

  1. Soak bulgur in warm water for 30 minutes (pour enough water to cover the bulgur)
  2. Make the filling by heating oil in a pan on medium heat. Saute onions until translucent and add the minced beef. One the beef is browned, add seasoning; cumin powder, all spice, paprika, salt and pepper. Turn off heat and mix in pine nuts. Set aside.
  3. Drain the bulgur and add to a bowl with all ingredients for the shell. Mix well. Process meat mixture in small batches in a food processor to obtain a dough consistency.
  4. Pre-heat oven to 180C. Grease a baking tray with olive oil spray.
  5. Take a golf ball sized amount of processed raw meat mixture and form it into a ball. Using your finger, poke a hole in the ball to make a pocket for the filling. Add some cooked beef filling and pinch the top to seal the ball. Repeat process for each kibbeh.
  6. Place kibbeh on a greased baking tray. Spray kibbeh with olive oil and bake for 30-35 minutes turning each kibbeh half way.
  7. Mix all ingredients for salad and dip. Add kibbeh to salad and serve dip on the side.

 

Notes:

*Kibbeh can be deep fried

*For a quicker version of baked kibbeh, grease a large baking dish with olive oil. Layer the bottom with kibbeh dough pressing down to form a thin layer. Top off with kibbeh filling. Repeat by layering the bottom with the meat dough and top with kibbeh filling. For the final layer use the kibbeh dough. Using a knife cut diagonal lines to create diamond shapes on the top layer. Create a small hole in the middle and drizzle olive oil. Bake for 40-45 minutes
