Recipe : Vietnamese charred chicken thighs with a zesty sauce

Servings: 3-4
6 portions of chicken thighs from Hudson Meats
1 stalk lemongrass minced
6 cloves of garlic minced 
1 inch ginger minced 
2 tbsp fish sauce 
1 tsp salt or 1 tbsp soy sauce 
1 tsp black pepper 
2 tbsp sweet soy soy sauce or honey to brush with Sauce
1/4 red onion finely diced
2 tbsp finely chopped coriander
1 birds eye chilli finely chopped(optional)
1 tbsp rice wine vinegar or white vinegar 
Juice from half lime
3 tbsp fish sauce
2 tbsp honey
1/2 cup water 


  1. Mix ingredients for Marinade and combine with chicken
  2. Mix ingredients for sauce and set aside
  3. Spray a pan with olive oil on high heat. Cook chicken for 6 minutes each side whilst brushing with sweet soy sauce/honey.
  4. Pour sauce over chicken and serve immediately over white rice or noodles.
