Ingredients
8 sausages of choice from Hudson Meats
3 large potatoes from Hudson Meats washed, peeled and quartered
1 green capsicum sliced
200g mini capsicum halved
2 red onions quartered
3 cloves minced garlic
4-5 sprigs of thyme
4 tbsp balsamic vinegar
2 tbsp olive oil
1 tsp black pepper
Method
- Pre-heat oven to 200C
- Add potatoes with 2 tbsp of olive oil to a large baking tray and bake for 15 minutes. Set aside
- Mix garlic, thyme, balsamic vinegar, olive oil and pepper with a pinch of salt in a bowl.
- Make small slits on each sausage.
- Add sausages, capsicums and onion to baking tray with potatoes. Pour in mixed sauce and toss to combine well.
- Bake for 20 minutes.
- Serve with a salad
