Recipe : Sausage & Vegetable Bake

Servings: 4
8 sausages of choice from Hudson Meats
3 large potatoes from Hudson Meats washed, peeled and quartered 
1 green capsicum sliced
200g mini capsicum halved
2 red onions quartered
3 cloves minced garlic 
4-5 sprigs of thyme
4 tbsp balsamic vinegar
2 tbsp olive oil
1 tsp black pepper


  1. Pre-heat oven to 200C
  2. Add potatoes with 2 tbsp of olive oil to a large baking tray and bake for 15 minutes. Set aside
  3. Mix garlic, thyme, balsamic vinegar, olive oil and pepper with a pinch of salt in a bowl.
  4. Make small slits on each sausage.
  5. Add sausages, capsicums and onion to baking tray with potatoes. Pour in mixed sauce and toss to combine well.
  6. Bake for 20 minutes.
  7. Serve with a salad
