Recipe : Plum Pudding with Brandy Caramel Sauce

Serves 6


1 portion of Phillippa’s plum pudding from Hudson Meats


Brandy custard sauce
80g caster sugar icing sugar
300ml thickened cream
2 tbsp brandy
500ml milk
1 tsp vanilla bean paste
6egg yolks
3 tsp cornflour


  1. Place plum pudding (do not remove plastic wrapping) in a large pot of boiling water. Steam plum pudding in plastic wrapping for 1-2 hours.
  2. Whisk eggs, vanilla, flour and sugar until well combined. Add milk and cream to a saucepan and bring to a boil. Pour in whisked mixture and cook over low heat for 15 minutes.  Strain and transfer to a bowl. Add brandy, mix and refrigerate.
