Ingredients
5 lamb kofta skewers from Hudson Meats
5 large wholemeal flatbreads
1 small red onion thinly sliced
2 small Lebanese cucumbers thinly sliced
60g mixed salad leaves
Handful mint leaves
Home made tzatziki
350g Greek yoghurt
1 clove minced garlic
1 Lebanese cucumber grated
1 tbsp finely chopped dill
Juice from half lemon
Pinch of salt
1 tbsp olive oil
Method- Preheat oven to 180C.
- Mix ingredients for tzatziki and set aside
- Line a tray with baking paper and place koftas on tray.
- Bake koftas for 20 minutes.
- Divide onion, cucumber and salad leaves between flatbreads and top with kofta, mint and tzatziki.
- Fold into a wrap and serve.
