Recipe : Lamb Kofta Wraps

5 lamb kofta skewers from Hudson Meats
5 large wholemeal flatbreads
1 small red onion thinly sliced
2 small Lebanese cucumbers thinly sliced
60g mixed salad leaves
Handful mint leaves
Home made tzatziki
350g Greek yoghurt
1 clove minced garlic
1 Lebanese cucumber grated
1 tbsp finely chopped dill
Juice from half lemon
Pinch of salt
1 tbsp olive oil
  1. Preheat oven to 180C.
  2. Mix ingredients for tzatziki and set aside
  3. Line a tray with baking paper and place koftas on tray.
  4. Bake koftas for 20 minutes.
  5. Divide onion, cucumber and salad leaves between flatbreads and top with kofta, mint and tzatziki.
  6. Fold into a wrap and serve.
