Ingredients
1 portion of skirt steak from Hudson Meats
2 tbsp Hot smoky BBQ sauce from Hudson Meats
4 cloves minced garlic
1 tsp thyme finely chopped
2 tbsp olive oil
Pinch of sea salt
1 tsp pepper
Salad
80g Mixed greens
1 Cucumber thinly sliced
3 Nectarines thinly sliced
½ lemon
1 tbsp Red wine vinegar
2 tbsp olive oil
½ tbsp Chives and oregano finely chopped
1 tbsp Dijon mustard
Optional: Feta or goat cheese
Method
- Mix BBQ sauce, garlic, thyme, olive oil, salt and pepper in a small bowl.
- Pour over skirt steak and set aside
- Remove steak from marinade and add to a hot grill along with peach slices. Remove peaches once slightly charred. Cook steak for 3 minutes on each side ( medium rare)
- To make the salad dressing add olive oil, red wine vinegar, juice from half lemon, mustard, chives and oregano. Mix in a jar
- Toss salad leaves, cucumber and nectarines with salad dressing. Add pieces of feta or goat cheese if using.
- Slice steak and serve over salad
