2 portions chicken breast from Hudson Meats
Juice from 1 lemon and zest
2 tbsp Greek yoghurt
¼ cup olive oil
1 tbsp finely chopped oregano
4 cloves minced garlic
2 tsp smoked paprika
1 tsp black pepper
1 tsp salt
Creamy dill and cucumber sauce
4 tbsp Greek yoghurt
1 tbsp olive oil
½ cucumber finely chopped
1 tsp fresh oregano finely chopped
1 tbsp fresh dill finely chopped
Salt and pepper to taste
4 burger buns (brioche), sliced tomato, onion and lettuce to serve with
- Bring chicken breast to room temperature. Cut each into half horizontally to make two steaks.
- Mix all the ingredients for the marinade. Place chicken breast in a bowl and pour over marinade. Mix to coat well and set aside to marinate for 2 hours or more.
- Heat a grill pan on high heat. Spray olive oil and place chicken on pan. Cook for 3-4 minutes on each side
- Mix ingredients for the sauce. Toast buns. Assemble burgers by spreading sauce on bottom, layering with lettuce, chicken, tomato and onion. Finish by spreading more sauce over the top of the bun.
