Makes 10 skewers
Ingredients
4 portions chicken breast from Hudson Meats
Aphrodite Feta from Hudson Meats
1 tbsp Hardcore carnivore rub -red from Hudson Meats
1⁄2 cup Yoghurt
4 tbsp Olive oil
6 cloves minced garlic
3 tsp dried mixed herbs
1 red capsicum cut into1/2 inch chunks
1 green capsicum cut into1/2 inch chunks
1 large red onion cut into1/2 inch chunks
100g baby Spinach
100g cherry tomatoes sliced
1⁄2 red onion thinly sliced
Salad dressing:
2 tbsp olive oil
2 pesto of choice
Salt and pepper

Salad dressing:
2 tbsp olive oil
2 pesto of choice
Salt and pepper
Method
- Cut chicken into 1 inch cubes.
- Add yoghurt, 2 tbsp olive oil, garlic, hardcore rub and herbs to a large bowl and mix.
- Toss in chicken and marinate for an hour. Thread the chicken, capsicum and onion onto metal skewers.
- Heat a barbecue grill on medium high. Cook skewers, for 20 mins turning and
- brushing with olive oil.
- Cut feta into cubes and toss with 2 tbsp olive oil and 1 tsp herbs.
- Mix ingredients for salad dressing, toss feta, spinach, tomatoes and onions to combine.
- Serve with chicken skewers
