Carnaroli is the best, highest quality superfine rice from Piedmont, and is the preferred rice type in most regions of Italy.

Most often referred to as the 'king of rices', it is a favourite with chefs as it is more resistant to overcooking than Arborio.

The medium grain is well-rounded and extremely absorbent, with a complex starch structure that produces a very luxurious, thick and creamy risotto without the need of extra dairy products.

The legacy of Riseria Gazzani traces back centuries to the Renaissance era in Vigasio, Verona. The mill’s origins, dating between the late 15th and early 16th centuries, mark the inception of agricultural activity in the region, evolving into a rice mill that persists to this day.
