Ripe tomatoes that lose most of their water content after drying time in the sun.

These tomatoes are usually pre- treated with salt before being placed in the sun in order to improve quality.

They make a great addition to an antipasto platter and are ideal in salads, with pasta or in a chargrilled eggplant and chicken sandwich.
