Eye Fillet | Tenderloin

Eye fillet, also known as tenderloin is all grass-fed and pasture-raised.  The beef is sourced from south-eastern Australia.

Each eye fillet steak is sliced to order and weighs approximately 250 grams.

Cooking Tip : Sear each side of the eye fillet on a hot frying pan for 3 minutes. Once seared, placed the frying pan into a moderate oven for 10 minutes.  After 10 minutes, turn the oven off and pull the oven door ajar, allowing the eye fillet to rest for 5 minutes.

Serve with Red Wine Jus.
