Air-dried, salted beef that has been aged 2 to 3 mths until it’s hard and turns a dark red, purple colour.

Made from leg or rump cut, lean, tender, with a sweet, musty smell.

Originates from Lombardy, Italy.

Sliced paper-thin and served at room temp.

Eaten as is or drizzle olive oil and lemon, balsamic vinegar, with rocket salad, and black pepper.

There is approximately 30 slices per 100 grams.
